P & J French Toast Rolls

Ready to Eat!
I tried a new breakfast treat that I saw on the news last night. This seemed like a good idea to combine peanut butter & jelly with french toast.
Here's how I made it:
  • 2 eggs 
  • 1/4 cup milk 
  • 1/4 teaspoon vanilla
  • 6 - 8 slices of whole wheat bread
  • Peanut butter
  • Jelly
 On each slice of bread, spread 1/2 with peanut butter and the other half with jelly. Roll them up, I found that if you start with the jelly side it stays better.  In a large bowl, combine the eggs, milk and vanilla. Melt about 1 tablespoon of butter in a frying pan on medium heat. Dip the rolled bread into the egg mixture then place in pan. Turn when golden brown. Remove to plate and sprinkle with confectioner's sugar. Serve with maple syrup if desired.
